देहरादून। देहरादून के शास्त्री नगर क्षेत्र में स्थित “द मिलेट कैफे” ने भूले बिसरे व्यंजनों को नए अंदाज़ में प्रस्तुत करने का कारगर उपाय अपनाया है। लगभग डेढ़ साल से भी अधिक समय से कपिल डोभाल और उनकी पत्नी दीपिका डोभाल ने पहाड़ के दादी-परदादी के जमाने के खानपान पर विस्तृत अनुसंधान किया है और इसे आधुनिक रूप में पेश कर रहे हैं। इस दौरान, उन्होंने 47 विभिन्न व्यंजनों को तैयार किया है, जिनमें से आठ को “मिलेट कैफे” में उपलब्ध कराया गया है।
“मिलेट कैफे” में आने वाले ग्राहकों को दीपिका और कपिल व्यंजनों की पौष्टिकता के बारे में विस्तृत जानकारी प्रदान की जाती है। इनका उद्देश्य हर व्यक्ति तक पहाड़ के खाद्य उत्पादों की सुरक्षित और स्वादिष्ट पहुंच पहुंचाना है। दीपिका, जो राजस्थान के नागौर जिले की हैं, बताती हैं, “मैं मूल रूप से उत्तराखंड की हूं और हम चाहते हैं कि उत्तराखंड में आने वाले हर पर्यटक यहां के व्यंजनों को अपनी स्मृति में रखकर जाएं।”
कपिल बताते हैं, “हमारा प्रयास कारगर हो रहा है, खासकर युवा पीढ़ी की बात करूं तो मेरे व्यक्तिगत अनुभव के अनुसार, उनका रूझान पहाड़ के व्यंजनों की ओर बढ़ा है। हमें उनका समर्थन मिल रहा है।”

The Millet Cafe: Reviving Traditional Mountain Cuisine in Shastri Nagar, Dehradun
Located in the Shastri Nagar area of Dehradun, “The Millet Cafe” is introducing forgotten mountain cuisines in a modern and innovative way. For over two and a half years, Kapil Dobhal and his wife Deepika Dobhal have been researching and preparing traditional recipes from their mountainous heritage.
So far, the couple has crafted 47 different dishes, with eight of them showcased at “The Millet Cafe.”
Customers at “The Millet Cafe” are informed about the nutritional value of dishes. Their goal is to make the flavors of mountain produce accessible to everyone. Deepika, originally from the Nagaur district in Rajasthan, emphasizes, “I am essentially from Uttarakhand, and we want every tourist coming to Uttarakhand to carry the taste of our cuisine in their memories.”
Kapil explains, “Our efforts are proving fruitful, especially among the younger generation. According to my personal experience, there is a growing inclination towards mountain cuisines. We are receiving support for our initiative.”
